Football Playoff Recipe Series: Green Bay Vegan Bratwurst

We’re starting off the Football Playoff Recipe Series with Green Bay Vegan Bratwurst. Don’t be left out in the cold during the NFL playoffs with bland game-day dishes. Spice up your viewing experience with exciting new plant-based, regionally-themed dishes. We looked at classic recipes unique to each region where an NFL team made the playoffs and converted them to plant-based alternatives. Take the plant-based playoff challenge and see how many of these meals you can create. This is the first of a 6 part series.

Ingredients:

Vegan Bratwurst Ingredients
1 package Harmony Valley Vegetarian Hamburger Mix (Harmony Valley Vegetarian Hamburger Mix, 5.7-Ounce (Pack of 6))
1/4 teaspoon mace
1/8 teaspoon nutmeg
1/4 teaspoon white pepper
1/4 teaspoon allspice
1/4 teaspoon marjoram
1/4 teaspoon parsley (fresh is ok)
1/8 teaspoon celery seed
1/4 cup non-fat dry milk
1 teaspoon Himalayan Crystal (or sea) salt

Tomato Jam Ingredients
1/4 cup olive oil
1/4 cup beer (avoid hoppy beer for better flavor)
3 medium ripe tomatoes, cored and chopped
1 tablespoon apple cider vinegar
2 teaspoons brown sugar
1 teaspoon fresh thyme, finely chopped
Add sea salt and freshly ground black pepper (to taste)

Other Ingredients
6 hoagie sandwich rolls, split
1 cup sauerkraut

Optional Ingredients: Jalapeno and Vegan Cheddar Brats
1 cup small cubed vegan cheese
3 tablespoons chopped jalapeno peppers (or more to taste)

 

Instructions:

Vegan Bratwurst

  1. Preheat oven to 350°F
  2. Thoroughly mix bratwurst spices together and add to dry vegetarian hamburger mix
  3. Prepare vegan hamburger mix according to package instructions
  4. Add 1/4 cup vegetable oil and 1/4 cup beer after mixing
  5. Divide the mix into six servings and form into sausages to match the length of the serving roll
  6. Spray cooking oil on a cookie sheet and bake for 12 minutes (turn once)
  7. You can now cook the brats in an oiled skillet or on a grill. Gently maneuver the brats so that they don’t break. You only need to cook them for a few minutes on each side
  8. Optional: Remove from oven and add vegan cheddar cheese and jalapeno pepper if desired (vegan cheese has a low melting point and thus is recommended to be added after cooking)

Tomato Jam

  1. In a small saucepan, mix tomatoes, vinegar, sugar, thyme, 1/4 tsp. salt, and 1/8 tsp. pepper
  2. Bring to a boil, then reduce heat and simmer, stirring often
  3. Reduce until most of the liquid has evaporated and the mixture thickens like chunky ketchup
  4. Season to taste with salt and pepper, then set aside

Assemble the Vegan Bratwursts

  1. Grill rolls for about 2 minutes
  2. Spread the rolls with some of the tomato jam
  3. Place brats in rolls
  4. Top with sauerkraut and serve
